Spinach Artichoke Dip ( gluten free, vegan, paleo)
Perfect snack for those times where you just want a little extra. This spinach artichoke dip is really simple to make and is so delicious. It goes well with crackers or veggies. The recipe does make a lot, so if it’s just for you I would cut in half. On the other hand with the amount the recipe makes, it’s great for parties. One thing I look forward to at parties are the dips! It’s just that most traditional dips, while so good, are not the best for you. Luckily this one is so you can enjoy it at a party or at home, and you can rest assured knowing you didn’t get off track.

Ingredients
1 13.5 oz. can artichoke hearts chopped
1/3 cup diced onions
16 oz. frozen spinach, thawed and rinsed.
1 1/4 cup mayonnaise (for vegan option use follow your heart mayonnaise)
1 cup soaked cashews
8 oz. cream cheese (for vegan option use kitehill, spero, or miyokos cream cheese)
the juice of 1/2 lemon
1/4 tsp. pepper
1 tsp. salt
Instructions
Soak 1 cup of cashews in water for about 30 minutes. Then drain and rinse.
Place soaked cashews and mayonnaise into a food processor or vita mix and combined until creamy.
Add the creamy cashew mixture to a large bowl, and add the rest of the ingredients. Store in the refrigerator.
