Coffee(less) Pumpkin Spice Latte

Every year around this time pumpkin spice lattes seem to be all the rage. To be honest I have never had one because I don’t drink coffee. Never really liked it unless it’s coffee ice cream. I am a fan of pumpkin, and the sound of a pumpkin spice latte sounded good, but I couldn’t just go to a coffee shop and get one since they usually have dairy and lots of sugar. So I decided to make my own, only without coffee. So I guess technically it’s not a latte, more like pumpkin pie in a cup, but still delicious. Of course you can always add coffee to make a latte, I just can’t guarantee if it will taste good, but you can always experiment. What’s great about this recipe is that it is very easy, and because it has no coffee, kids can enjoy it too. So if you have kids that don’t like hot chocolate and they like pumpkin or pumpkin pie, then they just might like this. And bonus, it’s not loaded with refined sugar and is dairy free.

Ingredients

  • 1 cup milk of choice

  • 3 tbsp. pumpkin puree

  • 2 tbsp. maple syrup or honey or 4 drops of liquid stevia.

  • 1/4 tsp. vanilla extract

  • 1/8 tsp. cinnamon or pumpkin pie spice

    Note: (This is recipe is for one serving)

Instructions

  1. Put all ingredients into a medium sauce pot, and whisk. Heat until hot. Usually takes about 3-5 minutes.
