Breakfast Sausage (dairy free, gluten free, paleo)

Breakfast has never been one of my favorite meals, if I’m being honest. Especially now with many restrictions it’s hard to eat a “normal” breakfast. Luckily though, this sausage recipe gives me a breakfast meat option for whenever I want a more filling breakfast. It’s easy to make and can be kept in the freezer for months. So whenever you want sausage just pop it into the microwave or oven. No need to be buying store bought sausage anymore. The seasoning mix can be used with whatever meat you prefer. You can also dice an apple and add a few tablespoons of maple syrup for apple maple sausage. Or do what I do and drizzle a little maple syrup on it.

Ingredients

  • 1 pound ground turkey, chicken, or pork

  • 1 tsp. sage

  • 3/4 tsp. ginger

  • 1/2 tsp. cayenne pepper

  • 2 tsp. salt

(optional) 2 -3 tbsp. maple syrup, and/or 1 diced apple

Instructions

1. Add all the seasoning into a small bowl and mix well.

2. Sprinkle seasoning mix over ground meat, and incorporate with hands or spoon. (if adding maple syrup or apples add those in too).

3. Heat frying pan on medium to high heat.

4. Form meat mixture into small, circular patties. Make sure not to make them too thick.

5. Cook for about 5 minutes on each side.

6. Let cool completely before freezing.

7. To freeze, take two sausages and roll into plastic wrap tightly. Repeat with the rest, and place all the wrapped sausage into a large zip lock bag. Make sure most of the air is out.
