Apple Crisp (paleo, gluten free, vegan, dairy free, egg free)
The holidays are just around the corner already! Which means it brings more of a challenge when trying to stick to a healthy diet. I mean who doesn’t want cookies and pie around this time of year? That being said, your body doesn’t care what time of year it is! I’m not saying to deprive yourself, because that will just make you frustrated and be even more tempted. Believe me I’ve been there. Just be smart about what you’re choosing to splurge on. One way to stay on track is make things yourself. Especially if it’s dessert. Then you can eat it and not send your body through a sugar rush, that only leads to a crash. Some people might be intimidated to bake healthy desserts, but trust me it’s worth it. It’s about planning ahead, and you get to enjoy delicious dessert without the side effects. This apple crisp is an easy dessert, free from refined sugar, dairy, and gluten. This will give you that apple pie fix, but so much easier to make!

Ingredients
6 medium green apples (peeled and thinly sliced)
1 tsp. cinnamon or pumpkin pie spice
3 tbsp. of xylitol or coconut sugar (if using coconut sugar you can add an extra 1/2-1 tbsp. since xylitol is sweeter than coconut sugar)
2/3 coconut oil or butter (melted)
10 tbsp. cassava flour
8 tsp. coconut sugar or xylitol (for crust)
Instructions
Preheat oven to 375 degrees.
In a medium bowl add apples, cinnamon or pumpkin spice, and 3 tbsp. of xylitol or coconut sugar. Mix well.
In a separate medium bowl add cassava flour, melted coconut oil or butter, and 8 tsp. xylitol or coconut sugar.
Pour apples into 8x8 baking dish. Then take the dough by the handful and thin out and lay over the apples. Repeat until majority of the apples are covered. The crust doesn’t have to cover all the apples like a pie, just most of them. Just make sure you don’t have any sections where the crust is too thick.
Bake for 25 minutes or until the crust gets slightly golden. Let cool before serving.
Keep in refrigerator.
